This hummus is so good! It's a mix of Greek and Italian flavors and it comes together so well.
1 can of chick peas, drained
2 cloves of garlic
1/2 cup roasted red peppers, chopped
1/2 cup roasted red peppers, chopped
1/4 cup of kalamata olives, pitted
salt
pepper
olive oil
Place the first 6 ingredients in a food processor. Stream in olive oil as mixture is processing. The consistency should be smooth and creamy.

I make something similar...my hummus is often a mix of whatever I have on hand. I'll probably add some fresh lemon juice for a little tang when I make this! Hope you had a great trip to the NW!
This is cool...we make hummus sans tahini and LOVE it. Sometimes it the tahini can overpower the lovely taste of the chickpeas. And I agree w/ melissa & jon - adding a bit of lemon juice just gives it another delicious layer of flah-vah. Great site!! I like that you use not-so-fancy plates to showcase your edible masterpieces. We do the same and sometimes i feel like 'loser blog' b/c we don't have any fancy 'presentation' plates!
